Samantha Kenny is the leading voice on food waste in tourism, hospitality, and food service sectors.
Samantha developed and led the World Wildlife Fund Hotel Kitchen program with the American Hotel and Lodging Association. She also developed the National Restaurant Association 86 Food Waste platform and contributed to the United Nations One Planet Global Tourism Food Waste Roadmap.
She has supported multi-year food waste strategies for companies including Hilton Worldwide, Four Seasons Hotels and Resorts, Royal Caribbean Group, Starbucks, and Sodexo Global.
She has been a featured speaker on this topic, including at the AHLA Responsible Stay Summit, ReFED Food Waste Solutions Summit, and the UN Tourism Sustainable Destinations Summit.
Samantha works to improve all aspects of the circular food system to transform markets and better serve communities. She developed BiteWise so all teams and groups can easily adopt food waste tracking, and move on to improving aspects of the food system critical to feeding people and reducing nutrient pollution. As designer and Head of Product for BiteWise, Siegfried specializes in transforming complex operational challenges into elegant, automated solutions. His expertise lies in designing systems that provide enterprise-level data without the typical overhead of enterprise software.
His work includes architecting the technology stacks and data management platforms for global impact organizations, including Habitat for Humanity, World Wildlife Fund, Make Food Not Waste, and VaynerMedia.
Siegfried is the lead architect of BiteWise, responsible for the platform’s AI integration, executive dashboarding, and mobile-first capture infrastructure. He developed the BiteWise engine specifically to remove the technical and financial barriers that have traditionally kept food waste tracking out of reach for independent operators. By prioritizing user experience and hardware-free precision, he ensures that BiteWise moves at the speed of a professional kitchen, turning raw operational data into actionable intelligence for teams worldwide.
